When tasting, only a small sip is required in order to detect the oils particular flavors.
Chef Cora also suggests using the potato test if you prefer to not do a tasting. Bake or boil a potato and pour extra virgin olive oil on it. A poor quality olive oil will release a heavy, unpleasant smell when poured on a baked potato. High quality oil will have a pleasant fruity odor, says the article.
